Stuffed Zucchini with Minced Meat and Sundried Tomato Strips with Sunflower Seeds with Herbs in Oil OLE!
Ingredients:
• 2 large zucchinis
• 500g minced meat (pork shoulder and beef mix)
• 1 small pack of baby mushrooms
• 1 can tomato sauce
• 1 garlic clove
• 1 chopped onion
• 1 tablespoon Provençal herbs
• Sundried tomato strips with sunflower seeds with herbs in oil OLE!
• Oil
• Grated yellow cheese
Sauté the chopped onion in oil. Add chopped garlic and sliced mushrooms. Sauté until golden and tender. Transfer to a bowl. In the same pan (without cleaning it), brown the minced meat until it changes color. Add canned tomatoes and sundried tomato strips. Cut the zucchinis in half and scoop out the insides, chop, and add to the filling. Sauté everything briefly, then stuff the zucchini halves with the filling. Generously sprinkle with grated cheese. Bake at 180°C for about 25-35 minutes until the zucchinis are golden.
