Fried Potatoes with Eggs, Mozzarella, and Mushrooms

Ingredients:
• 1 kg of potatoes
• 3 eggs
• 1 ball of mozzarella
Marinated mushrooms with carrots and onions OLE!
• Basil leaves
• Chili flakes
• Salt
• Provençal herbs
• Oil for frying

Wash the potatoes thoroughly without peeling, and boil in salted water until slightly firm. Cool and slice evenly, about 0.5-1 cm thick. Season and fry on both sides until golden.
Add beaten eggs mixed with salt and pepper to the potatoes. Top with halved mushrooms, mozzarella, and sprinkle with chili flakes and basil leaves. Wait until the eggs set on top, forming an omelet, and the bottom is browned.
Gently flip and fry for a while longer, just enough to prevent the cheese from sticking to the pan. Sprinkle with fresh basil leaves.
Serve warm or cold.
