Quick pancakes with bruschetta in tomato sauce
Pancake batter:
– 1/2 cup of flour
– 1 egg
– 1/2 cup of milk
– a pinch of turmeric
– 1/3 cup of sparkling water
– frying oil
– salt pepper
Stuffing:
– Bruschetta OLE!
– sliced yellow cheese (about 2-3 slices of cheese for each pancake)
– fresh basil leaves
Sauce:
– 2 cloves of garlic
– passata
– favorite spices
– salt pepper
– 30g grated cheese or mozzarella for sprinkling
Combine the ingredients for the dough with a mixer/blender with a whisk.
Let it rest in the fridge for about 30 minutes.
After this time, cook thin pancakes. Cool them down and put slices of cheese, bruschetta and basil leaves in the middle of each. Roll up the pancakes.
Combine the sauce ingredients and pour the sauce over it. Sprinkle generously with shredded cheese or mozzarella. Bake for about 20 minutes at 180 degrees.
