Courgettes with millet and olives
Ingredients:
• 2 large (thick) courgettes/zucchini
• 150 g millet (preferably organic)
• Pitted black olives OLE!
• Cherry tomatoes
• 1 onion
• 1 cube of mozzarella
• 1 small pack of small mushrooms
Rinse the millet and boil it in salted water. Cut the courgettes lengthwise in half and hollow out the centre (as shown in the photo).
Dice the onion and cook it. Cut the mushrooms in half (if they are large, cut them into slices).
Add to the onion and cook until the mushrooms are golden brown. Add the groats and mix everything thoroughly.
Put groats with vegetables inside the courgette, add olives and chopped tomatoes on top. Sprinkle with grated mozzarella.
Bake at the oven 180 Celsius degrees for about 20 minutes. If the top is not baked enough, switch the oven to the grill function at the end.
