Meatballs in tomato sauce with olives
Ingredients:
Meatballs:
• 500g of minced turkey
• 1 yolk
• 2 tablespoons of breadcrumbs
• 1 onion
• salt, pepper
• frying oil
Tomato sauce with fresh tomatoes:
• 1.5 kilograms of fresh raspberry tomatoes
• 2 cloves of garlic
• ½ a jar of OLE sliced green olives!
• 1 onion
• salt pepper
• spoon of soy sauce
• 2-3 tablespoons of thick cream
• a handful of fresh parsley
• 1/3 cup of olives
Scald the tomatoes and peel them. Put chopped garlic and chopped onion on slightly warmed olive oil (be careful not to burn it). Cook until golden brown, add diced tomatoes (if you want the sauce to be very thick, remove the liquid centre with tomato seeds first).
Season it. Cook for about an hour – the sauce should reduce and become thick.
Finally, add the soy sauce, cream, olives and chopped parsley.
Carefully combine the ingredients for the meat. Knead small balls (it’s best to do this with wet hands so that the mass doesn’t stick to the hands).
Fry until golden brown. Serve the meatballs as you wish – with the sauce only, with the addition of pasta, rice / groats or bread.
