Vegan oyster mushroom “herring” with dried tomatoes and olives

• 500g of oyster mushrooms
• 1 onion
• 1 tablespoon of vinegar
• 1 tablespoon of soy sauce
• 1 teaspoon of spices
• Oil
Green Pitted Olives OLE!
Dried Tomatoes OLE!
• 1 red onion
• 2 bay leaves

Clean the oyster mushrooms and cut them into smaller pieces along the gills. Cook in oil until golden brown. Cut the onion into thin slices and cook separately.
Let the cooked mushrooms cool down. Combine them with all the ingredients (except for dried tomatoes).
Set aside overnight in the fridge.
Serve with sliced dried tomatoes and olives.
