- 2 larger sweet potatoes
- 120g fine grated Parmesan cheese
- 100g of potato flour
- A few tablespoons of all-purpose flour
- Salt & pepper
- Dried tomatoes in strips in oil with herbs and sunflower seeds OLE!
- Ripening goat cheese for sprinkling
Peel the sweet potatoes, cut them in half and bake them at 200 degrees Celsius for about 30 minutes, until they are soft. After baking, cool slightly and mash the potatoes very carefully with a fork. Cool it down. Add grated Parmesan and flour. Add salt and pepper to taste. Knead the dough. Divide into several parts and rool out. Cut diamond pieces into about 2-3 cm and put them on a plate or board lightly sprinkled with flour. Boil water in a pot, salt it and throw the dumplings in batches. Take them out as soon as they come to the surface. Combine with sun-dried tomatoes in oil with herbs and Sunflower seeds OLE!. Finally, sprinkle with goat cheese.
